Healthy Vegan Falafel
Deliciously healthy vegan falafel.

  1. 1 medium sweet potato, pre-cooked and cooled
  2. 14 oz can chickpeas, rinsed and drained throughly
  3. ¼ tsp cayenne pepper
  4. ½ cup fresh parsley
  5. 1 clove garlic
  6. 1 tbsp ground cumin
  7. 1 tsp sea salt
  8. ½ tsp pepper
  9. Dash of paprika
  1. Preheat oven to 350 degrees.
  2. Through all ingredients into a food processor and pulse a few times. You will want the mixture chunky.
  3. Roll into balls (about 12) and place on a baking sheet with parchment paper.
  4. Bake for 35-40 minutes.
  5. Serve!
