  1. 1/4 cup cooked quinoa (sub cauliflower rice to make this extra light!)
  2. 1/2 can of black beans (low sodium), rinsed
  3. 1/2 avocado, chopped
  4. 1/4 cup red onion, chopped
  5. 1/4 cup cilantro, finely chopped
  6. 2 cups kale, chopped
  7. 1 lime
  8. Garlic- to taste
  9. Cumin, red chili flakes, chili powder- to taste
  1. Cook quinoa
  2. Sauté onion, garlic for about 5 minutes
  3. Add cooked quinoa, chopped cilantro and lime to quinoa and simmer on low- at this time add any spices if you'd like.
  4. Add beans
  5. Set mixture aside and sauté kale for 1-2 minutes
  6. Serve all ingredients together and top with avocado
  1. Use all organic products if possible.
