Ingredients
  1. 6 large portobello mushroom top
  2. 2 cups sweet potato, chopped and baked
  3. 3 cups mix of bell pepper and zucchini, finely chopped
  4. BBQ seasoning
Instructions
  1. Toss chopped sweet potatoes in coconut oil and bbq seasoning at 425 for 40 minutes
  2. Chop and cut bell peppers and zucchini and sauté them briefly in coconut oil and bbq seasoning
  3. Pan fry the portobello mushrooms for a minute or two on each side to heat them up
  4. Once the sweet potatoes are done, mix together with the chopped and sautéed veggies and cost lightly with more bbq seasoning
  5. Stuff the mushrooms and bake for another 10 minutes
  6. Enjoy!
Notes
  1. For this recipe I recommend using all organic if possible!
