  1. 3 large bell peppers
  2. 1 lb ground turkey (or 2 cups cooked quinoa for vegetarians)
  3. 1 sweet onion, chopped
  4. 5 cups spinach, chopped
  5. 1 tsp minced garlic
  6. 1 tbsp chili powder
  7. 1tbsp cumin
  8. 3 tbsp tomato paste
  9. Salt,pepper to taste
  1. Preheat the oven to 400 degrees
  2. Cut the top off the bell peppers and scoop out the inside (make a cup)
  3. Bake the bell peppers for 10 minutes to soften them up.
  4. Meanwhile, brown the onion with the garlic.
  5. Set aside the browned onion once cooked.
  6. Brown the ground turkey (or cook quinoa) and mix all spices, onions, and tomato paste.
  7. Stir in spinach.
  8. Fill your bell peppers with the mixture and bake for another 10 minutes.
  9. *Use a smaller baking pan to ensure the bell peppers hold each other up!
