  1. 2 tbsp extra virgin olive oil
  2. 1 tbsp grass-fed butter
  3. 2 cups cooked quinoa
  4. 1 medium onion, finely chopped
  5. 1 heaping tbsp of minced garlic
  6. 1 medium green bell pepper, finely chopped
  7. 1 jalapeño, finely chopped
  8. 1 15oz can organic tomato sauce
  9. 1 15oz can organic low sodium chicken broth
  10. 1 tbsp chili powder
  11. 1/2 tbsp ground cumin
  12. 1/4 cup cilantro
  1. Heat oil in a large sauce pan over medium-high heat.
  2. Stir in quinoa, garlic, onion, jalapeño, and green bell pepper
  3. Add butter and stir for 5 minutes
  4. Stir in chicken broth and tomato sauce
  5. Add chili powder and cumin.
  6. Reduce heat and add in cilantro.
  7. Allow quinoa to cook for 15-20 minutes.
  1. Use all organic ingredients if possible.
  2. Refrain from opening the pot until quinoa is fully cooked (20 minutes).
