Ingredients
  1. Coconut oil
  2. 1 yellow onion, diced
  3. 8 oz mushrooms, sliced
  4. 3/4 cup almond meal/coconut flour mix
  5. 1 tsp. salt
  6. 1 tsp.
  7. 1 can chickpeas
Instructions
  1. In a skillet add 1 tsp. coconut oil. Sauté the onion and mushrooms for about 5 minutes.
  2. In a large mixing bowl, add the almond meal/ coconut flour, salt, and paprika
  3. In a food processor briefly pulse the chickpeas and remove half (make sure some there are still large chunks, do not pulse completely)
  4. Remove a little more than half of them and add to the bowl.
  5. Add the mushroom and onion mix to the food processor with the remaining chickpeas and blend a few times until it's a pasty texture.
  6. Ad the mushroom mix into the bowl and mix everything together.
  7. Scoop out and roll into a ball, then patty.
  8. In a clean skillet, turn the heat on med-high and add coconut oil and add patties. Cook for a few minutes on each side until crisp.
  9. Serve over veggies or top with you favorites to make a yummy burger.
