Ingredients
  1. 1 tbsp minced garlic
  2. 1 medium yellow onion, chopped
  3. 4 cups chopped raw kale
  4. 8 cups organic low-sodium chicken broth
  5. 2 (15 ounce) cans cannellini beans, drained and rinsed
  6. 4 roma tomatoes, chopped
  7. Salt and pepper to taste
Instructions
  1. Sauté onion with garlic for about 5 minutes.
  2. Place tomatoes, 1 can of beans, onion, garlic, salt, and pepper into a crockpot.
  3. In a blender mix 1 can of beans and 2 cups of broth until smooth.
  4. Stir in mixed broth and the rest of your broth into the crockpot.
  5. Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
  6. When the soup is about done, lightly sauté kale in a pan and add to soup.
Notes
  1. Use all organic ingredients if possible.
  2. Optional toppings: avocado, hemp seeds, shredded chicken
