Healthy Vegan Falafel

Deliciously healthy vegan falafel.
Ingredients
- 1 medium sweet potato, pre-cooked and cooled
- 14 oz can chickpeas, rinsed and drained throughly
- ¼ tsp cayenne pepper
- ½ cup fresh parsley
- 1 clove garlic
- 1 tbsp ground cumin
- 1 tsp sea salt
- ½ tsp pepper
- Dash of paprika
Instructions
- Preheat oven to 350 degrees.
- Through all ingredients into a food processor and pulse a few times. You will want the mixture chunky.
- Roll into balls (about 12) and place on a baking sheet with parchment paper.
- Bake for 35-40 minutes.
- Serve!
