  1. 2 quarts chicken broth (or vegetable broth)
  2. 1 can of canned coconut
  3. 2 large zucchinis, spiraled
  4. 1.5 cups carrot, shredded
  5. 1 cup mushrooms, sliced
  6. 1/4 cup red onion, sliced
  7. 1/4 cup green onion, sliced
  8. 1/4 cup cilantro, finely chopped
  9. Garlic powder, to taste
  10. 1/2 cup cashews, toasted
  1. Heat broth and coconut milk
  2. Add red onion and garlic to broth and bring to boil
  3. Add carrot, mushrooms, green onion, and cilantro to broth and let simmer for 5 minutes
  4. Add in zucchini spirals for another 5 minutes (they cook quickly)
  5. While the soup is simmering, toast cashews for 5 minutes in coconut oil until cashews are toasted
  6. Serve and enjoy!
  1. Use all organic ingredients if possible.
