  1. 1 cup diced yellow onion
  2. 1.5 cups diced carrots
  3. 1 cup fresh tomatoes, diced
  4. 2 cloves garlic, minced
  5. 1.5 cup lentils rinsed
  6. 8 cups vegetable or chicken broth
  7. 1 (14 ounce) jar crushed tomato
  8. 2 jalapeno peppers, seeded and minced
  9. 1 tbsp ground cumin
  10. 1 tbsp ground chilli powder
  11. Optional (lime, avocado, cilantro, corn tortillas)
  1. Place all ingredients into a slow cooker on high for 5-6 hours.
  2. Top with lime, cilantro, avocado and corn tortillas.
  3. Enjoy!
Optional and recommended toppings
  1. Fresh cilantro, chopped
  2. Avocado, sliced
  3. Gluten-free corn tortillas, sliced
