Ingredients
  1. CHICKPEA CROUTONS
  2. 1 (15-oz) can chickpeas (or 1.5 cups cooked)
  3. 1/2 teaspoon extra virgin olive oil
  4. 1/2 teaspoon garlic
  5. DRESSING
  6. 1 cup raw cashews, soaked overnight
  7. 1/2 cup water
  8. 2 tablespoons extra virgin olive oil
  9. 1 tablespoon lemon juice
  10. 1/2 tablespoon Dijon mustard
  11. 1 small garlic clove (you can add more)
  12. 1/2 tablespoon Worcestershire sauce
  13. FOR THE GREENS
  14. 1 small/medium bunch kale, washed and finely chopped
Instructions
  1. CROUTONS
  2. Rinse and drain beans and sauté in olive oil with garlic until crisp
  3. DRESSING
  4. Add the cashews and all other dressing ingredients into a high speed blender, and blend on high until the dressing is super smooth.
  5. LETTUCE
  6. De-stem the kale and then finely chop the leaves.
  7. Place all ingredients into extra large bowl and toss/mix together vigorously
  8. Enjoy!
