Ingredients
  1. 1/4 cup cooked quinoa
  2. 2 tbsp red onion, chopped
  3. 1/4 red bell pepper, chopped
  4. 2-3 cups greens of your choice (I use romaine and kale mixed)
  5. 1/2 avocado, chopped
  6. Dressing: 1/2 lemon juice, 1 tbsp organic olive oil , splash of soy sauce
Instructions
  1. Wash and chop all ingredients
  2. Mix all ingredients together
  3. Enjoy
Notes
  1. Top with protein of your choice
  2. *Quinoa is already high in protein*
